- 1 onion (large, finely chopped)

- 400 grams black beans (tins, drained and rinsed under cold running water)
- 2 fresh bay leaves

- 1/2 red onion (finely diced)

- 1 bunch fresh coriander (stalks finely chopped, leaves roughly chopped)
