This is so flavorful with just salt and pepper. I did not cook it at 450 degrees. I convection baked at 350 degrees. Did everything else the same. A 3.2 lb. chicken cooked fully in 1:15 minutes. Long ago, a work colleague told me to salt a chicken as much as seems appropriate to me then salt it the same amount again. I’ve always followed that rule and it works perfectly. We both loved it.
