Ingredients

  • 220 grams plain flour
  • 1 1/4 teaspoons baking powder
  • 1/2 teaspoon soda (bicarb)
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 2 egg whites
  • 500 grams bananas
  • 130 grams brown sugar
  • 50 grams vegetable oil

    Directions

    1. Preheat oven to 180 degrees and lightly coat loaf pan with cooking spray.
    2. In a bowl, combine flour, baking soda, cinnamon and salt, set aside. Combine eggs, banana, sugar and oil in TM bowl. Mix for 10 seconds on speed 4, or until combined, but still a little chunky.
    3. Add flour mixture to bowl and mix counter-clockwise operation for 20 seconds on speed 4.
    4. Spoon the batter into the pan, and place in oven or 45 to 50 minutes or until a skewer inserted in centre comes out clean.
    5. Cool in pan for 10 minutes then turn out onto a rack. Allow to cool completely before slicing.
