  • 2 tablespoons olive oil
  • 1 onion (large, diced)
  • 3 cloves garlic (minced)
  • 3 medium carrots (diced)
  • 3 stalks celery (diced)
  • 2 medium potatoes (peeled and diced)
  • 2 teaspoons italian seasoning
  • 4 cups vegetable broth (+ 1 cup water)
  • 15 ounces diced tomatoes
  • 1 cup corn (I used thawed from frozen)
  • 15 ounces kidney beans (drained and rinsed, optional)
  • 1 bay leaf
  • 1/4 cup parsley (chopped)
  • 1 tablespoon lemon juice (freshly squeezed, more to taste)
  • 1 1/2 teaspoons kosher salt (more to taste)
  • freshly ground black pepper

    I have made this soup many times and have substituted when missing a couple ingredients, such as black beans for kidney beans, no celery, canned tomatoes or fresh tomatoes, and even Rotel for a little kick. It always comes out great

    Needs more seasoning in my opinion, however it's not hard to add more salt and pepper 😋

    I made this for a work lunch because I have several coworkers who are vegetarians. I managed to not overcook the vegetables so everyone enjoyed it.
    I may add meat next time, to make it stick with me longer...but, this was one of the best vegetable soups that I have made!! Great flavor and consistency.

    I added an extra cup of water with a beef bouillon cube and used beef broth instead of vegetable, added peas and only used one potato, I added some extra garlic(I love garlic), and added seof cayenne cause I like a little kick, really good soup. I’ve made it before and each time I tweak it a little bit

    It turned out amazing! I added 2 more potatoes (because my family loves them) and I didn’t put the lemon juice in. It turned out great, definitely will be making it again!

    This recipe was easy to make and delicious. I added 1/2 head of cabbage about 25 minutes into making the soup. Yummy 😋
