I used applesauce as a sub for the egg, and oat flour for the wheat. It turned out pretty well...they were mildly sweet, flavorful, yet slightly too moist (fragile). I also didn't have time to refrigerate them, so they sat for about 10 mins before baking. Over all, they were good!
