  • 1/2 cup gluten (certified, free quick oats, use purity protocol oats if you have celiac disease)
  • 2 tablespoons sorghum flour
  • 2 tablespoons coconut flour
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon salt
  • 2 tablespoons sunflower seed butter (no sugar added, or another unsweetened nut or seed butter of choice)
  • 1 egg (if you cannot have eggs, use a flax or chia egg, directions in Notes below recipe)
  • 4 tablespoons pure maple syrup (or honey, I use 2 T., but you may want these sweeter. Experiment to find what you like best.)
  • 2 tablespoons unsweetened applesauce
  • 2 tablespoons sunflower seed (EACH: roasted unsalted, kernels, Enjoy Life mini chocolate chips, raisins, if you don’t eat one or more of these, substitute something else like dried cherries for the raisins, or omit one or more altogether)
