- 1 cup gouda cheese (good quality, diced)
- 1 cup dried cranberries
- 1 cup walnuts (raw or caramelized, to taste, see link above)
- 2 Granny Smith apples (diced)
- 1/2 cup extra-virgin olive oil
- 6 Tbsp. apple juice concentrate (frozen organic, reseal with plastic and a rubber band and place back in freezer to avoid waste)
- 4 Tbsp. apple cider vinegar
- 3 Tbsp. white balsamic vinegar
- 1 tsp. Dijon mustard
- 2 tsp. fresh lemon juice
- 1 tsp. honey
- 1 pinch sea salt
- 1/2 tsp. freshly ground pepper
