  • 1 pound ricotta cheese
  • 8 ounces mozzarella (good quality, sliced or shredded)
  • 1/2 cup parmigiana
  • cheese
  • 1/2 cup cheese (grated freshly grated Pecorina)
  • 8 ounces sour cream (carton)
  • 1/4 cup Italian parsley (fresh, chopped)
  • 1/2 teaspoon salt
  • 2 large eggs (I use jumbo, lightly beaten)
  • 4 tablespoons olive oil
  • 2 onions (medium, minced)
  • 4 garlic cloves (minced)
  • 2 green peppers (chopped)
  • 4 ounces mushrooms (chopped)
  • 1 pound beef sirloin (good ground)
  • 1 pound mild Italian sausage
  • 7 cups tomatoes (Italian-style, AND the juice.)
  • 24 ounces tomato paste
  • 2 cups water (– more if you feel necessary)
  • 2 tablespoons salt
  • 2 tablespoons rosemary
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon sugar (and no more)
  • 5 tablespoons fresh basil (chopped)
  • 1 bay leaf
  • 1/2 cup Italian parsley (fresh, chopped)
