- 1/2 head green cabbage (finely shredded)
- 3 medium potatoes (cut into 1-inch cubes)
- 1 red beet (large, shredded)
- 1 Tbsp. red wine vinegar
- 1 tsp. duck fat
- 1 drop liquid smoke
- 2 tsp. sugar
- 2 Tbsp. butter
- 2 onions (medium, finely chopped)
- 2 peeled tomatoes (chopped)
- 1 carrot (sliced)
- 1 parsley root
- 1/2 parsnip
- 6 peppercorns
- 3 allspice berries
- 3 bay leaves
- 1 whole garlic (head of, peeled and chopped)
- 3 Tbsp. tomato paste
- 2 Tbsp. duck fat (mixed with 3 drops liquid smoke)
- 1 lb. beef (shredded chuck)
- 1/2 lb. duck (magret, breast fillet of, sliced and shredded)
- 1/4 tsp. hickory smoke (liquid, or more to taste)
