- 1 chipotle in adobo (minced, Herdez brand preferred)
- 2 tsp. adobo sauce (chipotle)
- 1/3 cup tomato paste
- 1 Tbsp. Mexican oregano (rubbed between the palms)

- 1 jalapeno (minced)
- 3 cloves garlic (minced)
- 1 1/2 tsp. ground cumin (freshly)
- 1/2 tsp. ground coriander seed (freshly)
- 1 1/2 tsp. chili powder (– only Gebhardt’s brand will suffice for a true Texan! Buy it on Amazon here)
- 3/4 tsp. paprika
- 2/3 cup beef broth
- 1/3 cup Mexican beer (dark, such as Negro Modelo)
- 1/3 cup chopped cilantro
- 1 bay leaf
