- 1 lb. minced beef
- 1 finely chopped onion
- 2 garlic cloves (very finely chopped)
- 2 portobello mushrooms (large, finely chopped)
- 2 carrots (peeled and cubed)
- 2 stalks celery (de-stringed and sliced)
- 1 handful finely chopped parsley
- 1 handful celery leaves (finely chopped - if unavailable, just use parsley)
- 1 Tbsp. thyme (finely chopped fresh soft)
- 1 Tbsp. fresh rosemary (finely chopped)
- 1/2 Tbsp. English mustard (Hot, use this amount if using horopito leaves - if not, use 1 tablespoon mustard)
- 2 Tbsp. tomato paste
- 1/4 tsp. leaves (ground Horopito, or to taste, optional but strongly recommended)
- 1 1/4 tsp. Maldon Sea Salt Flakes
- 3 3/4 tsp. cornstarch
- 2 1/2 lb. puff pastry (butter)
- 1 cup grated cheddar (coarsely)
- 1 egg (lightly beaten)
- 1 1/2 Tbsp. vegetable oil
- 10.5 oz. beef (scraps, cut into cubes)
- 3.5 oz. slab bacon (piece of, cut into 3cm cubes)
- 1 onion (unpeeled, thinly sliced)
- 5 garlic cloves (unpeeled, halved)
- 6 thyme sprigs
- 3 fresh bay leaves
- 1 tsp. black peppercorns
- 1/4 cup brandy
- 6 1/2 cups chicken stock (best-quality)
