- 1 Tbsp. sugar
- 0.25 oz. dry yeast (instant-rise, about 1 tablespoon)
- 3 cups bread flour
- 1 1/2 tsp. salt
- 2 Tbsp. vegetable shortening
- sesame seeds
- 1 cup pitted green olives (coarsely chopped)
- 1/2 cup pitted black olives (coarsely chopped)
- 6 oz. giardiniera
- 1 Tbsp. liquid (finely chopped, pickled Italian vegetables) (1 cup), plus 1 tablespoon of liquid from the jar)
- 2 Tbsp. capers (tiny, plus 2 teaspoons of liquid from the jar)
- 1/3 cup roasted red bell pepper (finely diced, ¼ inch)
- 1/4 cup celery (finely diced, ¼ inch, with leaves)
- 2 Tbsp. flat leaf parsley (chopped)
- 2 1/2 tsp. minced garlic (finely)
- 2 Tbsp. red wine vinegar
- 1 anchovy fillet (mashed)
- 1 Tbsp. shallot (minced)
- 1 tsp. dried oregano
- 1 pinch dried thyme
- 1 pinch crushed red pepper
- 1/2 cup extra-virgin olive oil
- salt
- pepper
- 1/4 lb. genoa salami (Oldani is the best)
- 1/4 lb. capicola (this is my spin, you can use regular Ham.)
- 1/4 lb. mortadella (I use San Danielle)
- 1/8 lb. mozzarella (Sliced)
- 1/8 lb. provolone
