- scallions (Several, washed and minced - light green and white parts only, 4 oz. as prepared)
- 2 garlic cloves (minced)
- 1 bunch cilantro (minced)
- Mexican oregano (1 tbsp. dried)
- 3 red peppers (small hot, minced - serranos are perfect!)
- 2 limes (medium)
