- 1 cup watermelon radish (shredded, if unavailable, use daikon radish instead)
- 1 cup cucumber (shredded)
- 1/4 cup scallion (thinly sliced, for garnish, optional)
- meat sauce
- 12 oz. pork belly
- 1 Tbsp. minced garlic
- 1 Tbsp. scallion (minced)
- 1/3 cup yellow bean paste
- 1/4 cup sweet bean paste
- 1 Tbsp. sugar (TFD prefers to use Maltose)
- 1/2 cup Shaoxing cooking wine (紹興料酒)
- 2 cups pork stock (preferred or water)
- 2 Tbsp. fermented black beans (finely-minced salted, Optional - TFD addition)
- 2 tsp. chili paste with garlic (Chinese, Optional - TFD addition)
