- 1 onion (chopped)
- 2 lb. beef sirloin (cubed)
- 6 cups low sodium canned beef stock (or homemade beef stock, preferred)
- 2 Tbsp. cider vinegar
- 1 Tbsp. worcestershire sauce
- 1 Tbsp. ketchup (mushroom, or use Worcestershire)
- 1 tsp. salt (use 2 if using homemade stock)
- 1 tsp. ground black pepper
- 2 tsp. pepper (Tasmanian, pounded in a mortar and pestle or just use regular black pepper)
- 1 tsp. oregano (rubbed between the palms)
- 1 pinch nutmeg
- 2 tsp. thyme
- 2 Tbsp. parsley (minced)
- 2 dashes hot sauce (choice)
- 2 Tbsp. tomato paste
- 1 tsp. vegemite (optional but needed for the true Aussie flavor!)
- 1 Tbsp. cornstarch
- 5 oz. butter (cut into cubes and softened)
- 2 cups flour (chilled)
- 1/2 tsp. salt
- 1 tsp. apple cider vinegar
- 1/3 cup cold water
- 4 Tbsp. unsalted butter (cubed)
- 2 cups all purpose flour (chilled, plus a little more for dusting)
- 1 1/2 tsp. salt
- 1 1/2 tsp. cider vinegar
- 3/4 cup water (chilled)
- 16 Tbsp. unsalted butter (chilled)
