- 310 grams gluten free flour (make sure it contains xanthan gum)
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1/4 tsp. vanilla beans (scraped, optional)
- 300 grams sugar (1 + 1/2 cups castor)
- 3 medium eggs
- 125 mL vegetable oil (flavourless)
- 1 tsp. vanilla extract
- 250 mL dairy-free milk (I like using rice milk for this recipe)
- 1 Tbsp. white vinegar (apple cider vinegar is fine too)
- 400 mL coconut cream (chilled in fridge)
- 1 Tbsp. sugar (or to taste)
- 1 tsp. vanilla extract
- 1/4 tsp. vanilla bean paste (optional)
- 1 pinch salt
