- 1/2 lb. applewood smoked bacon (or any bacon of your choice)
- 1 lb. penne rigate (You can use whatever type of pasta you like. I chose this type of pasta because the noodles hold so much cheese. The cheese can fill the inner tube and it also can ride into your mouth on the other ridges of the noodle)
- 4 cups whole milk
- 8 Tbsp. unsalted butter
- 1/2 cup all-purpose flour
- 12 oz. Gruyere cheese (grated, Emmi)
- 8 oz. extra sharp cheddar cheese (grated, Cabot)
- 6 oz. blue cheese (crumbled, St. Agur)
- 1/2 tsp. ground black pepper (freshly)
- 1/2 tsp. grated nutmeg (freshly)
- 1/2 cup panko breadcrumbs (OR 5 slices white sandwich bread, crusts removed, toasted)
- 1/4 cup fresh basil leaves (chopped)
