- 6 squash (medium Mexican, or zucchini, about 1/2 pound each, peeled)

- 1 chopped onion (medium)
- 2 large garlic cloves (finely chopped)

- 1/2 tomato sauce (the roasted)
- 1 cup brown rice (whole grain, uncooked)
- 3 Tbsp. pine nuts (toasted in a dry skillet over a medium flame for 2 minutes)
- 1/4 cup parsley leaves (each chopped, and mint)
