- 2 cups gluten free baking flour
- 1 Tbsp. baking powder
- 2 tsp. baking soda
- 1 1/2 Tbsp. ground cinnamon
- 1/2 Tbsp. ground nutmeg
- 1/2 Tbsp. ground ginger
- 1/2 Tbsp. ground cloves
- 1/2 tsp. salt (Salt)
- 1/2 cup Swerve (or your choice of sweetener)
- 3 Tbsp. egg (Substitution, I use NeatEgg or, sub for two eggs + 1 egg white)
- 3 Tbsp. coconut oil (Melted)
- 1 Tbsp. vanilla
- 1/2 cup applesauce
- 1 cup cashew milk (or your choice of milk)
- 1/2 cup walnuts (or your choice of nuts)
- 1 1/2 cups grated carrots (Chopped, bought the grated bag)
- 3/4 cup raisins (optional)
- 1/2 cup coconut cream (Heavy, I photographed the wrong canor condensed coconut milk or use Earth Balance vegan butter sticks.)
- 2 cups powdered sugar (Swerve, or vegan powdered sugar)
- 1/2 tsp. vanilla
