  • 5 ounces tuna (in water, drained, I prefer wild-caught albacore)
  • 2 eggs (local and/or pastured eggs taste the best!)
  • 1/2 yellow onion (diced)
  • 1/4 cup green onion (thinly sliced)
  • 1 lemon zest (+ juice)
  • 3 teaspoons mustard (I prefer spicy brown)
  • 1 tablespoon cajun seasoning
  • sea salt (to taste, I love THIS or THIS)
  • black pepper (to taste)
  • 1/2 panko bread crumbs (+ cup of, *, OR coconut flour, almond meal or flour, regular breadcrumbs, etc.)
  • 2 tablespoons cooking oil (I typically use california olive oil or coconut oil)
  • 2 lemons (cut into wedges, for squeezing on top of the patties)
  • dipping sauce (homemade, like aioli or remoulade)

    These are a go-to in my house - definitely tweaked it a little here and there but these are delicious!

    I would use REAL lemon (not the concentrate) and I had to use way more breadcrumbs than listed. Also used normal mustard, I think it was just as good as spicy but the lemon concentrate made it inedible
