- 2 eggs (local and/or pastured eggs taste the best!)
- 1/2 yellow onion (diced)
- 1/4 cup green onion (thinly sliced)
- 1 lemon zest (+ juice)
- 3 tsp. mustard (I prefer spicy brown)
- 1 Tbsp. Cajun seasoning
- sea salt (to taste, I love THIS or THIS)
- black pepper (to taste)
- 1/2 panko bread crumbs (+ cup of, *, OR coconut flour, almond meal or flour, regular breadcrumbs, etc.)
- 2 Tbsp. cooking oil (I typically use california olive oil or coconut oil)
- 2 lemons (cut into wedges, for squeezing on top of the patties)
- dipping sauce (homemade, like aioli or remoulade)

These are a go-to in my house - definitely tweaked it a little here and there but these are delicious!
