  • 1/2 cup sweetener (Pyure stevia, I purchase this at Wal-Mart and it costs $7/lb.)
  • 1/2 cup butter (cut into small pieces)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 5 1/2 ounces chocolate (4 ounces melted and 1 1/2 ounces coarsely chopped, unsweetened baking chocolate, stevia-sweetened chocolate, or chocolate that's 72% or darker all work, depending on your taste and dietary preferences)

    These were very good. I follow the THM plan so I used a diy (brianathomas.com) baking mix. I will make these again but probably add a bit more oil because my one complaint is they were a little dry.

    with my addition of more erythritol...cant say how much...maybe 1/4c. And the use of 5.5oz Hersheys dark chocolate in place of said combination, it turned out pretty good. Little more sugar than original recipe. But if i am looking for a lower carb cookie....i would rather it taste good. Texture was good.
