    Tried this cauliflower mash and it did not disappoint! It’s east and requires only a few ingredients which are basically in your cupboard already! So other than cauli-rice variation, I have additional cauli recipe that’s helping my diet.

    This mashed potatoes made out of cauliflower was REALLY good! I tried someone elses before and it was guh-ross... this stuff was super good though and it actually tasted like mashed potatoes! I was afraid to let it cool off that it might taste yuckie so I ate it right away. also... I weighed the cauliflower on a digital cooking scale to 400grams and it was NOT half a cauliflower... it was an entire head of cauliflower. Glad i weighed it. oh, and i used half the amount of pepper it called for.

    I would make this again, but not add the pepper bc it made it too spicy.

    It turned out pretty well. I used riced cauliflower rather than using a whole cauliflower head to save time but should have drained it before adding the ingredients, as I think it was a little watery than it should have been but it was still tasty. I served Corned Beef and Cabbage over it and thought it went very well together. I also added to the mix a little bit of Hidden Valley Ranch dry dressing mix to it. Will definitely make it again.
