I was actually super nervous as I was making these because I doubted that they'd turn out as good as they did! I used white corn tortillas and they were difficult to place in pan without ripping apart, so I microwaved them in a stack for about 20 sec. before placing them in the pan. This made 17 enchiladas! Because this made more than I expected, I doubled the cheese and sauce. We ate them with sour cream and olives on top. I prefer shredded beef, but we had elk burger on hand. They turned out very good!

Very good! Added some sliced avocado on the top as I was serving it and I really enjoyed it.

These will become a bimonthly thing. They were really good. I added chopped mushrooms to stretch the meal and now I won’t make it without mushroom. Maybe the best ground beef enchilada I’ve had.

Only adjustment made was, added can of rotel diced tomatoes with lime and cilantro on top before covering with cheese. Was a huge hit!!! Definitely will make again soon

I was expecting a little more flavor. Next time I’ll roll the enchiladas up with some pico de gallo.

awesome, make this for 40 clients, so @ 80 enchiladas. it turned out great. had no leftovers. will make again

Made these with my 8 yo granddaughter. I had cooked chicken so we cut it into fine pieces and substituted it for the ground beef. We did cook the onion in the microwave before adding it to the chicken. They were easy and tasty! Used white corn tortillas and canned enchilada sauce.

Delicious! Used wheat flour tortillas in place of regular white flour tortillas. Either one works great!

Loved these. Super simple and i used the enchilada sauce recipe. Only thing I changed was added a little bit of the enchilada sauce to the meat after browning. Also, used the raw tortillas (flour) that you can buy in the refrigerated section of the grocery store. Just cooked them one at a time and filled and rolled as I went.

This was such a quick and delicious recipe. I did end up adding diced bell pepper in with the onions. Will definitely make this again soon!

I made these per the recipe and they were very good. Made them again this time adding a can of drained pinto beans and two small cans of green chilies. Also made 8 enchiladas out of the mix. Wow!!! It’s in my freakin awesome category now.
