- 2 celery ribs (large, chopped small)
- 3 roots (small parsley, chopped small)
- 1 1/2 tsp. salt (divided, use less if broth is salted)
- cracked black pepper (Several grinds of freshly)
- 2 cloves garlic (minced)
- 1 Tbsp. tomato paste
- 1 tsp. ground cumin
- 1 tsp. dried thyme
- 1 bay leaf
- 1 piece Parmesan (rind, optional)
- 2 boxes lentils (steamed ready-to-eat, by Melissa's Produce or Trader Joe's, 17-1/2 ounces each)
- 6 cups vegetable broth (unsalted, I've used homemade or Pacific brand)
- kale (Several handfuls of finely chopped, or spinach or chard)
