- 2 cups milk (scalded, heat to just below a boil, I use 2% milk)
- 4 cups all purpose flour (20 ounces,I use unbleached)
- 1 Tbsp. instant yeast (see note for active dry yeast)
- 3/4 cup all purpose flour (3.75 ounces)
- 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1 1/2 tsp. salt
- 12 Tbsp. butter (8-,softened)
- 3/4 cup light brown sugar (5.5 ounces,packed)
- 1 Tbsp. canela
- 1/4 tsp. cardamom (optional but delicious)
- 2 oz. cream cheese (softened)
- 8 Tbsp. butter (1 stick, 4 ounces, softened)
- 1 pinch salt
- 2 Tbsp. milk (or heavy cream)
- 1/2 tsp. vanilla extract
- 1 3/4 cups powdered sugar (7 ounces)
