- 1/2 lb. pork (lean)
- 2 tsp. finely chopped garlic
- 1 1/2 tsp. light soy sauce
- 2 tsp. granulated sugar
- 1 pinch freshly ground black pepper (or white pepper)
- 1 1/4 tsp. cornstarch (plus, 2 teaspoons cornstarch dissolved in 1 tablespoon water)
- 1/2 cup chicken broth
- 1 Tbsp. black beans (Chinese slated)
- 2 Tbsp. vegetable oil (or peanut oil, as needed)
- 1/4 tsp. sesame oil (Asian)
- salt (optional)

- 2 Tbsp. dried shrimp (soften in warm water then drain)
- 2 melons (small-sized green bitter, thinly sliced)
- 2 cloves garlic (chopped finely)
- 1 chili (seeded and chopped finely)

- 1 Tbsp. light soy sauce
- 1/2 Tbsp. demerara sugar
- 1/2 tsp. salt
- 1/2 tsp. rice wine
