like others have posted, it did come out a little grainy due to the flour. i grated my monterrey jack cheese (4oz.) and pepper jack cheese (4oz.), used butter and flour until it thickened, added onion and garlic powder, cumin, and paprika. i removed the pot from the heat and added the cheese a little at a time, stirring until incorporated and smooth. i added rotel and dices jalapenos and this made the flavor nice, but it was still just grainy.
