So, I made a couple of substitutions. I used a 9x13 baking pan, doubled the recipe, used apple juice, used almond milk, and used fresh pineapples.
And it still turned out great! I forgot to convert the baking times/temp since I was using a different pan than recommended. I ended up baking at 325°F for 1 hour 15 minutes and the edges were crispy. If that would be an issue for you, then I'd recommend using the 9 inch pan or figuring out the proper conversions.
This cake is dense and moist like a pound cake which I love! I can only imagine it would be even better if I followed the directions to a tee.
