I replaced water with milk (for flavor) and did not use any sweetener (stuffed with raspberries instead), tastes great. Careful to eat in moderation- they do have a very high (healthy) fat content.

As keto pancakes go these are pretty good. They are definitely fluffy and light. They have a very good flavour and look very nice. Next time I make these I will use my hand mixer instead of the blender which is a bit fussy and it's difficult to get all the thick batter out of the bottom. I did use superfine almond flour which really helped the texture but they still had that almond taste. They weren't eggy at all. My husband really liked them. To me they were ok, good for an almond flour pancake but they don't stop me missing the regular wheat flour pancakes!

Family loved them. They were a little grainy to me - more like cornmeal. I think my almond flour needs to be more fine.
Still, a nice change. The batter is very thick, so I put a blob down and then spread it with my spatula. This is all that’s left of the whole batch, so I’d say it was a hit! Thanks for giving us such good recipes!
