Honestly eating this as someone who doesn’t normally eat vegan/ vegetarian meals this did not turn out well nor as intended. I had never made risotto and could not find frozen rice. I ended up adding a fair bit of salt and hot sauce in the end. I will try again with an actual risotto another time

Was delicious. Due to lack of a couple thing and no desire to shop again, I switched out kale for leeks and I had a bunch of sorghum I wanted to try. So it was farro/sorghum mixed and no cranberries. Getting everything cooked and creamy takes some time ( made a huge batch) but my vegan wife wants this in the regular arsenal of holiday foods. One of those recipes you can play with a lot.
