    Now my favourite mussel dish. Very nice change to the white wine or tomato base options we normally have. I added a little lemongrass and a kaffir line lead and I think it made a big difference. Also the squeeze of lime at the end IS A MUST and changes the whole experience. Can’t wait to make again

    I made it with green curry. Added lemongrass and cilantro stems at same time as garlic and ginger.

    I used green Thai curry, I think it made it milder so the kids loved it too!

    I have made this multiple times and it is always a big hit. Follow directions exactly and it’s super easy. I have even used 4lbs of mussels but not increased the sauce because the recipe makes a lot of sauce. Serve with a good Gewurtzraimer wine and I cheat and make the Sweet kale salad kit with poppy seed dressing, perfect accompaniment.
