- 1 tsp. cumin seeds
- 5 cloves
- 1 1/2 star anise
- 1 tsp. white peppercorns
- 1/2 tsp. ground cinnamon
- 2 tsp. chilli flakes (dried)
- 2 Tbsp. groundnut oil
- 5 grams peanuts
- 5 garlic cloves (roughly chopped)
- 5 lime leaves (finely sliced)
- 30 grams galangal (peeled and roughly chopped)
- 2 lemongrass stalks (peeled and finely chopped)
- 1 tsp. shrimp paste (dried)
- 2 Tbsp. Thai fish sauce
- 1/2 tsp. freshly grated nutmeg
- 2 Tbsp. palm sugar (grated)
- 2 Tbsp. groundnut oil
- 2 red onions (sliced)
- 250 grams Jersey royals (halved or quartered depending on size)
- 2 red bird's eye chili (slashed)
- 250 mL chicken stock
- 250 mL low fat coconut milk
- 2 tomatoes (skinned and finely chopped)
- 6 kaffir lime leaves
- 1 1/2 tsp. palm sugar (grated)
- 2 Tbsp. soy sauce
- 2 Tbsp. Thai fish sauce (plus extra to taste)
- 500 grams king prawns (veins removed)
- 1 lime (juice only)
- 1 handful thai basil
- 25 grams toasted peanuts (roughly chopped)
- 1 red chilli (large, deseeded and sliced on an angle)
- sticky rice (steamed, to serve)
