- 1 shallot (medium ,minced)
- 2 Tbsp. fresh ginger (minced)
- 2 cloves minced garlic (2 cloves yield ~1 Tbsp)
- 1 red chili (Thai, or serrano pepper, stem removed and thinly sliced with seeds)
- 1 cup red cabbage (chopped ,optional))
- 3 Tbsp. red curry paste
- 14 oz. light coconut milk (2 cans, sub 1 can of full fat for extra creamy texture)
- 3 Tbsp. coconut sugar (plus more to taste)
- 1/4 tsp. sea salt (plus more to taste)
- 3 tsp. tamari (2- ,or soy sauce if not gluten free)
- 1 tsp. ground turmeric
- 1 red bell pepper (seeds and stem removed, cut into bite-size pieces)
- 1/4 cup green peas (frozen or fresh ,optional)
- 2 mangos (ripe)
- 1/4 cup roasted cashews (salted is best)
- 1 lemon (medium ,juiced)
- lemon wedges (optional)
- basil (Thai (or regular) ,or fresh cilantro, for serving)
- brown rice (* or coconut quinoa)
- broccoli (Steamed)

Very tasty. Nice curry flavor and heat. I used a whole habenero because that’s all my store had and whoa! I would definitely make again with the correct hot pepper and less lemon juice.
