Description

This Thai-inspired recipe is a great dinner for nights when you want to go meatless. The combination of vegetables creates a nice flavor and texture contrast. Since the sauteed vegetables are served over rice, this dish is super filling. A drizzle of sweet and sour sauce over the vegetables and rice before serving brings all the flavors together.
