  • 5 centimeters galangal (piece, sliced)
  • 3 kaffir lime leaves
  • 4 tablespoons evaporated milk
  • 2 1/2 tablespoons nam prik pao (*, store-bought or try my homemade version)
  • 200 grams prawns (peeled and deveined)
  • 100 grams cherry tomatoes (halved)
  • 100 grams button mushrooms (or straw, quatered)
  • 1/4 cup lime juice
  • 4 tablespoons fish sauce
  • 1/2 white sugar
  • 400 grams egg noodles (cooked, to serve)
  • 2 boiled eggs (medium, to serve)
  • coriander leaves (to serve)

  • 2 teaspoons fish sauce
  • 1/4 teaspoon white pepper
