- 4 Tbsp. fish sauce (as needed for salt flavor)
- 2 tsp. curry powder (I used McCormick brand)
- 1 tsp. brown sugar (to taste and depending on how sweet your tomatoes are naturally)
- black pepper
- salt
- 15 oz. coconut milk
- 1/2 cup thai basil leaves
- lime wedges (at the table for anyone who wants a squeeze of it.)
