- 1 bunch water spinach (Chinese, about 1 pound)
- 2 Tbsp. cooking oil (good-quality, with a high smoke point, such as avocado oil or olive oil)
- 2 red chilis (Thai, sliced lengthwise)
- 4 cloves garlic (smashed)
- 1/4 cup bone broth (chicken, or no-sodium chicken broth, use vegetable broth if vegan)
- 2 Tbsp. oyster sauce (use mushroom sauce if vegan)
- 1 Tbsp. fish sauce (omit if vegan)
- 1 Tbsp. Chinese cooking wine
- 1 Tbsp. black bean paste (fermented, I use Lee Kum Kee black bean garlic sauce)
- 1 tsp. sugar (I use brown sugar)
