- 1 red bell pepper (diced into matchsticks)
- 1/2 cup sliced green onions
- 1/3 cup chopped cilantro
- 1/3 cup creamy peanut butter (natural)
- 2 Tbsp. fresh lime juice
- 1 1/2 Tbsp. rice vinegar
- 1 1/2 Tbsp. soy sauce
- 2 Tbsp. honey
- 1 1/2 Tbsp. brown sugar (packed)
- 1 1/2 tsp. sesame oil
- 1 tsp. sriracha
- 2 tsp. minced ginger (peeled and finely)

I didn’t have time to make a supermarket run so I used the ingredients I had on hand. I used skippy super chunk peanut butter instead of the creamy natural. And I used a packet of Panda hot sauce instead of the siracha. This salad/dressing was delicious! I must add that the dressing is best used at room temperature, it get a little think after refrigeration.
