  • 1 tablespoon rice wine vinegar (or plain white vinegar)
  • 2 tablespoons sesame oil
  • 3 cloves garlic
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon low sodium soy sauce
  • 7 ounces rice noodles (box of, 2 servings, give or take)
  • 14 ounces extra firm tofu (block, drained and cubed)
  • 1/4 cup roasted peanuts (plain, crushed)
