This Thai Red Curry Coconut Soup is a super easy flavor-packed meal that's sure to become a weeknight dinner staple in your house!

- 1 Tbsp. coconut oil (or olive oil)
- 1 bell pepper (large sweet, sliced into thin strips)
- 1 large carrot (sliced into thin strips, julienne peeler)
- 8 oz. shiitake mushrooms
- 1/4 tsp. salt
- 1 Tbsp. fresh ginger (grated, ~1 inch of ginger, grated)
- 2 Tbsp. red Thai curry paste
- 1 can coconut milk (about 1.5 cups)
- 1 can chickpeas (about 1.5 cups cooked)

Addictingly good. I wouldnt call it soup since it turned out to be more of a thick sauce. It reminded me of pad thai, but without the peanuts and more saucy/creamy. It was so tasty I keep on wanting more anf im full righy now! I would recommend putting some thai basil leaves in at the end for garnish.
