- 3 Tbsp. Thai red curry paste (good quality!)
- 1 stalk lemon grass
- 4 cloves garlic (crushed)
- 1/2 onion (or 1 shallot, diced)
- 2 Tbsp. fresh coriander
- 1 tsp. ground cumin
- 1 tsp. ground coriander
- 2 red chili (large, roughly chopped)
- 1/4 tsp. chili powder (mild ground)
- 2 tsp. lime zest
- 500 grams boneless, skinless chicken thighs (diced)
- 300 mL chicken stock
- 425 mL coconut cream
- 1 lime
- 1 g beans (bell pepper, onion, peas...., I use red bell pepper, mushrooms, 1/2 onion. Try sugar snap peas and bamboo shoots if you're lucky enough to have access)
- 1 Tbsp. brown sugar
- 1 Tbsp. lime juice
- 2 Tbsp. fish sauce

Loved this, but in the future I'll add more chili flakes to turn up the heat. Great the next day for lunch too.
