- 2 large cucumber (medium or 1, peeled and thinly sliced)
- 1/2 bunch fresh cilantro (coarsely chopped)
- 8 fresh basil leaves (large, coarsely chopped)
- 16 fresh mint leaves (coarsely chopped)
- 1 Tbsp. vegetable oil
- 1/2 cup roasted salted peanuts (coarsely chopped, optional)
- 1 egg yolk
- 1 Tbsp. lemon juice
- 1 tsp. water
- 1 tsp. Dijon mustard
