- 1 cup cooked quinoa (prepared according to package directions)
- 1 lb. ground pork
- 2 cloves garlic (chopped)
- 2 Tbsp. minced ginger
- 1 Tbsp. lemon grass
- 1 cup shredded carrots (I used pre sliced matchstick sliced carrots from the store)
- 1 shallot (thinly sliced, you could substitute red onion or scallions)
- 1/2 red bell pepper (thinly sliced)
- 2 cups romaine lettuce (chopped)
- 2 cups green cabbage (shredded)
- 1/4 cup toasted cashews (you could substitute another nut if desired)
- 1/4 cup mint (chopped)
- 1/4 cup chopped cilantro
- 2 Tbsp. fish sauce
- 2 Tbsp. lime juice (about 2 limes, use some zest if you like)
- 1 Tbsp. palm sugar (I used this)
- 1 tsp. chili paste
