- 2 lb. cauliflower (cut into large florets)
- 3 Tbsp. coconut oil
- 1 red bell pepper (chopped)
- 1 yellow onion (medium, diced)
- 2 shallots (minced)
- 20 oz. pineapple (in juice, drained well)
- 4 cloves garlic (minced)
- 1 inch fresh ginger (piece, grated)
- 3 Thai chili peppers (or 1-3 teaspoons crushed red pepper flakes, more or less to taste)
- 1 Tbsp. coconut aminos (or tamari sauce)
- 1 Tbsp. rice vinegar (or coconut vinegar)
- 2 tsp. fish sauce
- 1 tsp. salt
- 1 tsp. ground coriander
- 1/2 tsp. ground black pepper
- 1/2 tsp. ground turmeric
- 1/4 tsp. ground cumin
- 1/8 tsp. fenugreek (ground)
- 3 cups chicken (cooked, cubed, a rotisserie chicken is perfect for this)
- 1/2 cup cilantro leaves (minced fresh, or fresh parsley)
- 3 scallions (green and white parts, thinly sliced, for garnish, optional)
