- 1 tsp. fresh ginger (grated, you may add more to your liking)
- 1 clove garlic (minced or grated)
- 1 sweet potato (chopped, skin removed if desired)
- 2 red peppers (thinly sliced)
- 12 oz. cremini mushrooms (sliced)
- 1/4 cup Thai red curry paste
- 2 tsp. smoked paprika
- 14 oz. coconut milk
- 4 cups low sodium chicken broth
- 1/4 cup reduced sodium soy sauce
- 2 Tbsp. fish sauce
- 1/2 cup creamy peanut butter
- 1 lime (juiced)
- 2 Tbsp. brown sugar
- 4 pkg. ramen noodle soup (seasoning packets discarded, you may also just use your favorite pasta)

I love this recipe, but it takes longer than 25 minutes because of all of the chopping, slicing, and grating.

Everything went great and it tasted amazing! It has alot of calories hence the peanutbutter and you taste that it’s a heavy hand of it. I recommend a little bit of fresh lime juice for serving to lift it a bit. Directions were okay but there was not much time to do the ‘meanwhiles‘ but other than that great!
