- 1 mango (large, peeled and pit removed, about 12-16 ounce mango, see note for frozen mango)
- 1 Tbsp. fish sauce (see note)
- 1 Tbsp. cornstarch (optional, only if you want a thicker sauce)
- 1 Tbsp. olive oil
- 1/2 cup finely chopped onion (or shallots)
- 3 garlic cloves (finely minced or pressed through a garlic press)
- 1 Tbsp. ginger paste (freshly grated, see note)
- 2 lb. boneless, skinless chicken breasts (cut into bite-size pieces)
- 1 Tbsp. red curry paste
- 1 Tbsp. curry powder (see note)
- 1/4 tsp. salt (I use coarse, kosher salt)
- 1 pinch black pepper

I love this recipe especially the coconut rice! Tbh, I often add a tablespoon of peanut butter, and garnish with chipped peanuts as well.

I will make it again - BUT. I found it fairly bland. I did as directed, (added a bit more mango as some suggested) and next time, I will triple the curry powder and paste. People said it smelled wonderful (I have hay fever so can't always rely on my smeller), tasted good. It took me longer than directions said, so maybe I'm just slow. I will make it again.

amazing!! i made it with quinoa instead of jasmine rice for more protein but the curry was the best ive ever made. would definitely make again for my whole family!

this is pretty good. definitely not a 30 minute recipe. watch for the cook time of the chicken and the size of the chunks used, as the cook time described may not be enough to fully cook the chicken. also, for a thai dish there was no heat, but maybe that was a product of my choice of curries. i suppose adding red pepper flakes when you eat it wouldnt be a bad idea.
