  • 1 tablespoon vegetable oil
  • 1/4 cup thai green curry paste
  • 1 pound extra large shrimp (peeled and deveined, with tails on)
  • 4 cups mixed vegetables (for stir-fry)
  • 1/2 cup coconut milk
  • 1 teaspoon lime juice
  • 1 teaspoon brown sugar
  • 1 teaspoon fish sauce
  • rice noodles (Cooked, to serve)

    Directions

    1. Heat the oil in a wok or large skillet on high heat. Stir-fry the curry paste for 2-3 mins, until fragrant.
    2. Add the shrimp and stir-fry for 2-3 mins, until they change color. Add the vegetables and stir-fry for 1 min.
    3. Stir in the coconut milk and bring to a boil. Reduce the heat to medium and simmer for 2-3 mins, stirring.
    4. Season with lime juice, brown sugar and fish sauce to taste. Serve with rice noodles.
