- 4 garlic cloves (finely chopped)
- 1 tsp. shrimp paste (roasted, see note)
- 10 whole white peppercorns
- 1/2 tsp. coriander seeds (dry-roasted, ground)
- 1/4 tsp. cumin seeds (dry-roasted, ground)
- 500 mL coconut cream
- 50 mL coconut oil
- 2 tsp. palm sugar (finely shaved light, or to taste, optional)
- 2 Tbsp. fish sauce (or to taste)
- 8 chicken thigh fillets (skinless, cut into bite-sized pieces)
- 250 mL coconut milk
- 250 mL chicken stock
- 400 grams eggplant (apple, halved, or pea eggplant)
- 1/2 cup thai basil (loosely packed)
- 4 kaffir lime leaves (coarsely torn, plus extra whole to serve)
- 3 red chillies (long, thickly sliced diagonally, plus extra to serve)
