- 3 yellow tomatoes (large, cut into chunks)
- 1/2 English cucumber (cut into chunks)
- 1/2 yellow bell pepper (cut into chunks)
- 1 shallot (small)
- 1 Tbsp. lemon grass (heaping, paste*)
- 2 tsp. fresh ginger (grated)
- 1 lime (juice, + the zest)
- 2 Tbsp. fish sauce
- 1 Tbsp. palm sugar
- 1 tsp. chile paste
- 1/4 cup mint (each, Thai basil, can use regular)
- 1/2 cup coconut milk (I used full fat coconut milk from a can)

- cooked shrimp (optional)

I didn't have any yellow tomatoes, so I used canned chopped tomatoes and had a red bell pepper. I need to by some shrimp for a garnish. Otherwise. it was great!
