- 1 lb. white fish fillets (skinned and cut into chunks)
- 1 stem lemon grass (roughly chopped)
- 1 garlic (fat clove, peeled)
- 1/2 inch fresh root ginger (piece, peeled and roughly chopped)
- 3 coriander leaves (level tablespoons fresh, plus a few sprigs to garnish)
- 2 kaffir lime leaves (roughly chopped, if unavailable, leave them out)
- 1 lime (the juice goes in the sauce)
- 1 red chilli (medium, deseeded)
- 1/2 red pepper (small, use only ¼ if it's a large one, deseeded and roughly chopped)
- 3 oz. coconut (dried, powder)
- 2 plain flour (level tablespoons lightly seasoned)
- 3 Tbsp. groundnut (or other flavourless oil, for frying)
- salt
- black pepper
- 1 sesame seeds (level teaspoon)
- 1 Tbsp. sesame oil
- 1 Tbsp. lime juice
- 1 Thai fish sauce (dessertspoon)
- 1 Tbsp. Japanese soy sauce
- 1 red chilli (medium, deseeded and very finely chopped)
